How to prepare 

  • Rinse the turkey thoroughly, and clean it from excess skin or unwanted fats, then leave it aside until it gets rid of excess water. 
  • Mix the ingredients of the marinade with black pepper, wild thyme, and garlic, after mashing it well in a large bowl, then rub the rooster in it from all sides, put it in the refrigerator and leave the rooster until the marinade is absorbed throughout the night. 
  • Take the turkey out of the fridge, then thaw the chicken stock cubes in warm water, and set aside. 
  • Drain the dressing and place the turkey in a clean tray. 
  • Place bay and cardamom leaves inside the rooster, and in another bowl, mix rosemary and thyme, with onions, garlic, lemon, and orange. 
  • Squeeze a little orange and lemon over the mixture, and add salt and black pepper. 
  • Cook the rice in water, season with a little salt for ten minutes, then filter it from the water and put it in a bowl. 
  • Heat the olive oil, add the chopped onions, and stir it well until it becomes a little fried, then add the chopped garlic to it. 
  • Reduce the heat and add the boiled rice, and cook for ten minutes, then add the roasted pine, mix the ingredients, then add the parsley. 
  • Fill the dazzling rooster with the cold rice mixture, and tie the two legs to keep the filling inside the rooster. Mix the butter and oil together with your hands, where the butter is at room temperature, then rub the butter mixture over the turkey and under the skin.

  • Leave the rooster in the oven at 180 ° C for four hours, or until you are sure it is cooked.

Tips 

  • You can do without stuffing the rooster with rice and replace it with vegetables, such as zucchini, carrots, a head of garlic, and onions.
